Smoked Sausage Lasagna

Description:


A make ahead breakfast or brunch entree, an interesting twist on traditional lasagna.


Ingredients:


1 Lb Hofmann Smoked Sausage
1/4 canola oil
1/2 cup chopped onion
1/4 cup flour
3 cups milk
1/2 teaspoon pepper
6 oven ready lasagna noodles (uncooked) -or- cooked and drained lasagna noodles
6 hard-cooked eggs, peeled and sliced
1 cup grated Provolone cheese
2 Tbsp grated Parmesan cheese
2 Tbsp chopped parsley

Directions:


  • In a large skillet, saute sausage over medium heat until cooked through. Remove from pan with slotted spoon and drain on paper towels
  • Drain pan of drippings. Heat oil in same skillet and saute onion over medium heat until tender
  • Add flour and pepper, stirring until smooth and thick. Continue to cook and stir for one minute
  • Stir in milk and cook until mixture thickens, stirring all the while. Simmer for 1 minute. Spoon 3/4 cup of sauce into bottom layer of a 13X9X2" baking dish
  • Layer with 3 pieces of lasagna, half of the sausage, eggs, sauce and Provolone cheese. Repeat, ending with Provolone
  • Sprinkle top with Parmesan. Bake in a preheated 350F oven for 25 to 30 minutes or until mixture is heated throughout
